This is an extraordinary coffee from Finca Paraiso 92 in the Cauca department of Colombia, produced by the acclaimed innovator, Wilton Benitez. Wilton is globally recognised for his pioneering work in controlled fermentation, turning the entire processing method into a precise, scientific art form.

This particular lot features the Tabi variety, a Colombian hybrid known for its excellent cup quality and resistance to rust. The focus on Tabi, combined with Benitez's experimental processing, results in a clean, highly complex, and intensely fruit-forward profile that truly stands out.

Processing: Advanced Natural
The distinctive flavour profile of this coffee is achieved through a multi-stage, controlled process:

Anaerobic Fermentation: The coffee is first sealed in oxygen-deprived tanks. This environment promotes the creation of specific acids that break down natural sugars, leading to distinct and intense fruit notes.

Natural Process: Following the controlled fermentation, the coffee is dried in the cherry (the natural process method) before being pulped.
