About This Coffee

 

From the rugged landscapes of the Tolima department, high in the Cañón de las Hermosas, comes this exceptional Pink Bourbon from Finca Villamaria. The farm is run by the respected local leader and agronomist, Rodrigo Oyuela. As president and founder of the COAGROHERMOSAS association, Rodrigo is a pillar of his community, known for his relentless pursuit of quality and his deep family tradition in coffee farming.

After years of trial and error on different farms, Rodrigo found his calling at Finca Villamaria. Here, he has perfected his craft, focusing on exotic varietals like this Pink Bourbon. Sourced from seeds originating in Huila, this coffee represents a new chapter for Rodrigo—a testament to his dedication to improving yields and pushing the boundaries of what is possible in this celebrated Colombian coffee region.

 

Processing Excellence

 

Rodrigo's meticulous approach to processing is the secret to this coffee's elegant and complex profile. It all begins with a strong incentive for his pickers, who are paid a premium to ensure only the perfectly ripe cherries are selected.

Processing Details:

  • Cherry Selection: Cherries are sorted for ideal ripeness before processing.

  • Initial Fermentation: The sorted cherries undergo a 12-14 hour dry fermentation to enhance complexity.

  • Demucilaging & Secondary Fermentation: After a mechanical demucilaging process, the beans are placed in a GrainPro bag with the collected mucilage and honey-water for a 22-hour fermentation, intensifying the inherent sweetness and floral notes of the Pink Bourbon.

  • Washing: The coffee is washed twice with clean water to ensure a pristine cup profile.

  • Drying: A slow, careful drying process of 10–15 days is undertaken in a "Casa-Elda" (a specialized drying house with a sliding roof), allowing Rodrigo to control the drying speed and prevent the development of unwanted notes.

Each step in this unique process is a deliberate choice made to highlight the vibrant, delicate character of this Pink Bourbon, resulting in a beautifully clean and expressive cup.
