About This Coffee

 

This coffee comes to us from Finca Cultivares, a boutique 16-hectare farm nestled in Colombia's renowned Huila region. At the helm is Santiago Noriega, a passionate fourth-generation coffee producer whose connection to the craft started early. At just 17, Santiago began deeply educating himself on the intricacies of specialty coffee, and in 2021, he launched Cultivares with a clear and ambitious vision: focusing intensely on advanced fermentation agriculture and the cultivation of rare, exotic varieties like the unique Papayo featured in this lot.

 

While the farm operates with a small, highly dedicated team, their impact on cup quality is immense. Santiago’s approach marries deep generational knowledge with modern, experimental processing techniques. The Papayo variety itself is somewhat of a regional treasure and under Santiago's careful management, it yields vibrant and fruit-forward results. His philosophy remains simple despite the technical complexity of his work, producing stunningly clean.

 

To achieve this profile, Santiago and his team used an Anaerobic Natural process. By strictly controlling the fermentation environment in oxygen-deprived tanks before drying the cherries whole, they are able to enhance the Papayo variety's sweetness and tropical character without sacrificing clarity. This careful processing translates directly into an expressive coffee, bursting with juicy notes of watermelon and bright passionfruit, all grounded by a rich cacao aftertaste.
