This striking and exotic coffee comes from Quebraditas, a farm in Colombia's Huila region led by Edinson Argote and his partner, Luz Angela. Edinson's journey in coffee is one of immense resilience and passion, having honed his skills at local buying stations before becoming a master of rare varieties. At Quebraditas, the focus is on high-value, unique cultivars like this Papayo—a rare mutation celebrated for its elongated cherries and lush, tropical flavor profile.
Edinson’s dedication to precision agronomy is perfectly showcased through his meticulous Thermal Shock Washed process. By selectively harvesting ripe cherries and utilizing a controlled, yeast-inoculated fermentation, he builds a deep foundation of vibrant sweetness. The fermentation is then halted with alternating hot and cold water "shocks" to seal the volatile aromatic compounds into the bean structure. This highly technical approach translates directly into a remarkably clean cup, bursting with bold pineapple and creamy coconut, rounded out by a bright cherry finish. It performs beautifully as a modern espresso, but its layered clarity truly shines as a filter coffee.
