This extraordinary coffee is grown at Quebraditas Coffee Farm in Huila, Colombia, by Edinson Argote, a producer who has established himself as a rising star and master of innovative processing. Edinson's journey is one of incredible resilience: after overcoming significant early life challenges, he developed his passion for coffee quality while working at a local buying station and later honing his skills at innovative farms in Cauca.
With his partner Luz Angela, he founded Quebraditas, a farm dedicated to cultivating high-value, exotic varieties like the highly sought-after Sidra. Often compared to Gesha, the Sidra variety is celebrated for its elegant floral, tea-like character and vibrant fruit notes. Edinson’s commitment to precision agronomy and fermentation science ensures that the quality and complex flavours of this rare variety are perfectly expressed.
Processing: Thermal Shock Washed
The exceptional clarity and intensity of this coffee are the result of Edinson's meticulous Thermal Shock Washed process, which is designed to lock in aromatic compounds and achieve an intensely fruit-forward profile while maintaining impeccable cleanliness.
Precision Fermentation: Ripe cherries are selectively hand-harvested and undergo a controlled fermentation (often inoculated with a specific yeast starter) to build complexity and vibrant acidity.
Thermal Shock: The fermentation is halted by washing the coffee with alternating hot and cold water. This sudden temperature change helps to "seal" the complex flavours into the bean structure.
This highly technical approach results in a stunningly clean cup, balancing the inherent floral elegance of the Sidra with an intense burst of complex, tropical fruit. Cup score: 90. Suitable for espresso but extremely special and tea-like as filter
