Edinson’s background in fermentation science ensures that the quality of this rare variety is perfectly expressed through a meticulous Thermal Shock Washed process. By utilizing controlled fermentation, he builds a foundation of intense acidity and sweetness, which is then precisely halted using alternating hot and cold water "shocks." This technical maneuver locks the volatile aromatic compounds directly into the bean's structure.
