Edinson Argote, Quebdraditas - Thermal Shock Sidra
Finca Quebraditas - Huila, Colombia
This incredible coffee comes from Quebraditas in Colombia’s Huila region, run by Edinson Argote and his partner, Luz Angela. Edinson is making a real name for himself in the world of specialty coffee, turning his farm into a hub for rare and interesting varieties. For this lot, they’ve focused on Sidra - one of my personal favourite coffee varietals.
To get the best out of the harvest, Edinson uses his signature Thermal Shock Washed process. Instead of leaving things to chance, he carefully controls the fermentation to build up the coffee's natural sweetness and vibrant acidity. Once it hits the sweet spot, he washes the cherries with alternating hot and cold water. This sudden temperature drop acts like a seal, locking all those complex flavors deep into the bean before it dries.
The result is a clean but vibrant cup that earned an impressive 90-point score. It's pink lemonade, soft honeysuckle and the distinct, floral sweetness of Turkish delight. While it makes a stunningly bright espresso, we really love brewing this one as a filter to let those delicate flavors completely open up.
