About This Coffee

From the lush, high-elevation forests of Worka Chelbesa comes this vibrant Natural Yirgacheffe, processed at the acclaimed Danche wet mill in the heart of Chelbesa Village. Nestled within Ethiopia’s Gedeb district, this area is renowned for producing some of the country’s most aromatic and complex coffees.

Chelbesa’s terroir is a semi-forest ecosystem, where heirloom varietals thrive under a canopy of shade trees and false banana plants, enriching the soil and slowing the cherry maturation. The result? A coffee profile full of floral lift, juicy acidity, and delicate fruit tones—hallmarks of the very best naturals from this region.

Processing Excellence

The Danche wet mill, built in 2019 by SNAP Specialty Coffee, was designed with a single purpose: to elevate the quality of cherry from nearby smallholders. The station uses ceramic fermentation tanks, which help retain heat and create a stable environment for fermentation—enhancing clarity and brightness in the final cup.

Processing Details:

  • Cherries sourced exclusively from 763 surrounding farmers

  • Fermentation: 72 hours (wet)

  • Soaking: 1 hour

  • Drying: 12 days on raised African beds

Each step is carefully managed to bring out the vibrant, clean fruit expression that Yirgacheffe is known for.
