About This Coffee

 

Bette Buna, which beautifully translates to "House of Coffee," is a community-driven initiative founded by Dawit and Hester, carrying forward the legacy of their grandparents. This particular lot is sourced directly from their model farm in Guji Megadu, a remote, densely forested region renowned for its spectacular soil. While the cherries here ripen to a brilliant red, this season presented immense challenges due to severe local labor shortages, unfortunately leaving much of the crop unpicked. Despite this, Bette Buna’s dedication to sustainable opportunities remains resolute; they continue to distribute hundreds of thousands of climate-adapted seedlings annually and provide meaningful employment to marginalized groups across their transparent supply chain.

 

To make the most of this hard-won harvest, the processing team utilized their innovative "Kickstart" method. Before traditional drying begins, the cherries are briefly placed in an anaerobic environment—a strategic "kick" that stops short of full fermentation but perfectly concentrates and restructures the natural sugars. The coffee is then dried on raised African beds, rested for a minimum of eight weeks to build complexity, and subjected to rigorous multi-stage sorting from the local dry mill all the way to their main facility in Gelan.
